Will, a very good reference is Jerry Lodriguss' CD entitled
Photoshop for Astrophotographers. It explains a lot of basic
principles that are relevant for film, CCD, digital cameras, whether
or not you use Photoshop. I highly recommend it for beginners and
more advanced folks alike. This will get you started on the right
foot, and then it's just a matter of practicing and showing your
images to groups like this for comments. Mike Unsold's tutorials
that accompany ImagesPlus software are also great for learning some
of the basics of image processing as well.
This is a difficult hobby that requires lots of patience and coffee
to stay awake at night, but it's rewarding as well. Thankfully the
learning curve is steep, so it doesn't take too long to get up to
speed...
